The wine lays in some great skin ferment complexity while maintaining freshness, feels resolved and balanced despite the impact of tannin and frisky acidity. Lots to sink one’s teeth into, an ‘experience’ wine.’

Hill of Dreams is our project in progress. We strongly believe that this is a very unique part of our terroir due to its poor gravelly soil and north/south exposure. Currently there’s 0.6 ha of Sauvignon Blanc, 0.2 ha of Verdejo, 0.15 ha Grüner Veltliner. Picked at perfect stage of ripeness- low in potential alcohol with fresh zesty flavours, that’s the power of the hill. Bunches were de-stemmed and crushed but the skins were included in the fermentation. Spontaneously fermented with no additions, unfiltered, un-fined. This is honest wine made with minimal intervention to express its place of origin. Fragrant, textured and utterly delicious.
