This Pet Nat is a mix of Shiraz and Gruner Veltliner, sourced from ‘Topper’s Mountains’ vineyards in Tingha in the New England area of Northern NSW. These grapes were hand harvested and spent two days on skins to extract colour and flavour before being pressed off. Fermentation began naturally without the addition of any yeast. Once fermentation was almost completed the wine was hand bottled and capped and left for three months to finish fermentation in the bottle and to impart subtle yeast complexity before being ready for release.
