This wine is from a single vineyard on the Northern side of Pokolbin in the Hunter Valley and has been producing some amazing wine for the past few years. The fruit was harvested in the cooler early hours of the morning and spent four hours on skins to extract some aromatics and phenolics before being pressed straight to a cold stainless-steel tank. The wine had a long, cool ferment at around 17 degrees to maintain the freshness and fruit flavours you see in the finished wine. Finally, it was fined using vegan friendly finings and filtered to give a clear and bright finish. Drink now or cellar for up to five years.
