The fruit was sourced from an organically grown Chardonnay vineyard high on the slopes of Mount Conabolas in the Orange wine region. These grapes are delicately flavoured and were harvested when they display naturally high acidity that is required to make quality sparkling wine. Once in the winery the fruit was gently pressed to produce a clear, fine juice. This was then clarified and fermented at a low temperature in stainless steel tanks to retain the fresh fruit characters. The wine then undergoes some secondary fermentation to impart subtle yeast complexity before final blending.
